Posted by student DIMAS ESPINOLA – Clinton School students Lindsey Barnett, Josh Stokes and I piloted the first workshop of the S.P.O.R.K. (Students and Parents Optimizing Recipes for Kids) Program on Thursday at eStem Public Charter School in Little Rock. Partnering with Kids Cook!, a local Arkansas business run by Faith Anaya, we developed a two-hour cooking session teaching 13 fifth-grade students at eStem basic culinary skills, safety in the kitchen and healthy food options before the summer begins. The kids prepared chicken quesadillas, cut fresh fruit and cut fresh vegetables. Meanwhile, parents attended a half-hour education session on healthy food choices from a nutritionist from the Department of Clinical Nutrition at the Arkansas Children’s Hospital.

We will evaluate the success of the pilot program and hope to develop more culinary workshops in the future for young children. Special thanks to Faith Anaya for her assistance and fellow classmate Chad Williamson for videotaping the pilot session.
